Ingredients:(Servings: 4)

1 cup cooked quinoa

1 cup cooked chickpeas (or canned, drained and rinsed)

1/2 cup breadcrumbs

1/4 cup grated carrot

1/4 cup chopped spinach

1 lemon (juice and zest)

1 tsp garlic powder

1 tsp onion powder

1 tsp dried oregano

Salt and black pepper to taste

2-3 tbsp olive oil for frying

Directions:

  1. In a food processor, pulse chickpeas until slightly mashed but not smooth.
  2. Transfer to a bowl and mix in quinoa, breadcrumbs, carrot, spinach, lemon juice, lemon zest, garlic powder, onion powder, oregano, salt, and pepper.
  3.  Combine until the mixture holds together.
  4.  Shape the mixture into burger patties.
  5. Heat olive oil in a skillet over medium heat.
    Cook each patty for 4-5 minutes per side until golden and crispy.
  6. Serve in a bun with lettuce, tomato, and your favorite sauce, or as a standalone dish with a fresh salad.
