Mediterranean Marinated Feta and Olives Bowl
Ingredients
Cheese & Olives:
- 1 cup feta cheese, cubed or crumbled
- 1 cup mixed olives (green, Kalamata, etc.), pitted if desired
- 1/2 cup sun-dried tomatoes, drained and chopped
For the Marinade:
- 1/2 cup extra virgin olive oil
- 2 tablespoons red wine vinegar (or lemon juice for more zing)
- 2 cloves garlic, finely minced
- 1 tablespoon fresh rosemary or thyme, chopped (or 1 teaspoon dried herbs)
- 1 tablespoon fresh parsley, chopped
- Salt and pepper, to taste
- 1/4 teaspoon crushed red pepper flakes (optional, for heat)
Instructions
Prepare the Ingredients:
- Cube or crumble the feta cheese and add it to a serving bowl.
- Add the mixed olives and sun-dried tomatoes.
Make the Marinade:
In a small bowl, whisk together the olive oil, red wine vinegar (or lemon juice), minced garlic, chopped herbs (reserving some for garnish), salt, pepper, and red pepper flakes (if using).
Combine & Marinate:
Pour the marinade over the feta, olives, and sun-dried tomatoes. Gently toss to ensure everything is evenly coated.
Let it sit at room temperature for 15-30 minutes to allow the flavors to meld, or cover and refrigerate for up to 1-2 hours for more intense flavors.
Serve:
Garnish with reserved fresh herbs and an extra drizzle of olive oil.
Serve with crusty bread, crackers, or as part of a mezze platter.
