Ingredients
- 2 cups cooked, shredded chicken (rotisserie chicken works great)
- 1 package (8 oz) cream cheese, softened
- ½ cup sour cream
- 1 packet (1 oz) taco seasoning mix
- 1 cup shredded Feta cheese
- 1 cup shredded Mexican blend cheese
- 1/2 cup finely chopped red bell pepper
- 1/2 cup finely chopped green onion
- 1 tablespoon fresh cilantro, chopped (optional)
- 4 large flour tortillas
- 1 tablespoon lime juice
- Salt and pepper, to taste
Instructions
- Prepare the Filling:
In a medium bowl, combine the cream cheese, sour cream, taco seasoning mix, lime juice, salt, and pepper. Mix until smooth and well combined.
Stir in the shredded chicken, shredded cheeses, red bell pepper, green onion, and cilantro (if using). Mix well until everything is evenly incorporated.
Assemble the Pinwheels:
Lay the tortillas flat on a clean surface. Spread an even layer of the chicken mixture onto each tortilla, leaving a small border around the edges.
Roll each tortilla tightly, ensuring the filling is secure inside.
Slice and Serve:
