Mushroom and Bell Pepper Rice

Ingredients

  1. 1 tablespoon olive oil
  2. 1 small onion, finely chopped
  3. 2 cloves garlic, minced
  4. 1 cup mushrooms, sliced
  5. 1 bell pepper (any color), diced
  6. 1 cup long-grain rice (such as basmati or jasmine)
  7. 2 cups vegetable broth (or chicken broth)
  8. 1 teaspoon dried thyme
  9. 1 teaspoon dried oregano
  10. ½ teaspoon paprika
  11. Salt and pepper to taste
  12. Fresh parsley, chopped (for garnish)

Instructions
Prepare the Vegetables:

  1. Within a large saucepan or skillet, bring the olive oil to a temperature of medium heat
  2. After three to four minutes, add the chopped onion and continue to cook until it has become translucent and softened.
  3. Cook for a further minute after adding the garlic that has been minced until the aroma is released.

While the mushrooms and bell peppers are cooking:

  1. After adding the sliced mushrooms to the pan, continue to cook them for five to six minutes, or until they begin to brown and discharge their moisture.
  2. After a further three to four minutes of cooking, stir in the diced bell pepper and continue cooking until the bell pepper is cooked.

Assemble the Rice and the Spices:

  1. The rice should be stirred in and let to simmer for one to two minutes, during which time it should be allowed to softly toast and absorb the flavours of the veggies.
  2. Paprika, dried thyme, oregano, salt, and pepper should be added to the mixture. Combine thoroughly.

Make sure to simmer the broth.

  1. Once the vegetable broth has been added, bring the mixture to a boil.
  2. Simmer the rice for fifteen to twenty minutes, or until it is cooked and all of the liquid has been absorbed, after lowering the heat to a low setting and covering the pan with a lid.

Garnish and fluff the top:

  1. After the rice has finished cooking, take it off the heat and let it rest while covered for five minutes.
  2. Using a fork, fluff the rice, and then top it with fresh parsley that has been chopped.
