Ingredients:

For the Stir Fry:

1 large carrot, sliced

2 cups broccoli florets

8 oz can baby corn spears, drained

8 oz mushrooms (white or brown), sliced or quartered

1 whole bell pepper (red, yellow, or orange), seeded and sliced

2 Tbsp cooking oil (extra light olive oil )

3 garlic cloves, peeled and minced

2 tsp ginger, minced

For the Stir Fry Sauce:

1/4 cup chicken broth (or vegetable broth for vegetarian)

½ tsp cornstarch

3 Tbsp low sodium soy sauce (or Tamari for gluten-free)

2 Tbsp honey

¼ tsp hot sauce, optional (Frank’s or Sriracha work great)

Instructions:

Prepare the Sauce:

In a small bowl, whisk together the chicken broth (or vegetable broth), cornstarch, soy sauce, honey, and hot sauce (if using). Set aside.

Cook the Vegetables:

Heat a large skillet or wok over medium-high heat. Add 2 tablespoons of cooking oil add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

Add the Vegetables:

Add the sliced carrots and broccoli florets to the skillet and stir-fry for about 2-3 minutes.

Add the sliced bell pepper, baby corn, and mushrooms. Stir-fry everything for an additional 5-6 minutes, until the vegetables are tender but still crisp.

Add the Sauce:

Pour the prepared stir-fry sauce over the cooked vegetables and toss to coat evenly.

Stir and cook for 1-2 minutes until the sauce thickens slightly and coats the vegetables.

Serve:

Serve the vegetable stir fry over rice, noodles, or enjoy as a stand-alone dish. Garnish with sesame seeds or fresh herbs if desired.

Preparation Tips:

Chop Ingredients Ahead: Pre-chop all vegetables and protein beforehand to save time during cooking.

High Heat Cooking: Stir fry on high heat to quickly cook the vegetables while retaining their crunch and vibrant colors.

Order of Cooking: Start with the protein, followed by denser vegetables (like carrots and broccoli), and add softer vegetables (like bell peppers and greens) last to avoid overcooking.

Serving Suggestions:

Serve over steamed rice, brown rice, quinoa, or noodles for a hearty meal.

Garnish with sesame seeds, sliced green onions, or fresh herbs for added flavor.

Variations:

Flavor Boost: Add spices such as chili flakes, five-spice powder, or a splash of rice vinegar for a tangy kick.

Nuts and Seeds: Toss in cashews, peanuts, or sesame seeds for added texture and flavor.

Different Sauces: Experiment with teriyaki, oyster sauce, or homemade peanut sauce for a unique twist.

Storage:

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a pan or microwave until heated through.

This Easy Vegetable Stir Fry is a delightful way to enjoy a healthy meal, making it a staple for anyone looking to eat well while saving time in the kitchen. Enjoy!
