Ingredients:
• 3 – 4 pound chuck roast
• 1 tablespoon olive oil
• 1 onion, finely diced
• 6 garlic cloves, minced
• 1 1/2 cups red wine
• 1 cup chicken broth
• 2 sprigs each fresh rosemary and thyme
• 5 – 6 carrots
• 2 pounds potatoes
Instructions:
1️⃣ Preheat your oven to 350˚F and heat a large Dutch oven to medium-high heat.
2️⃣ Season the chuck roast generously with salt and pepper.
3️⃣ Add olive oil to the hot pan and sear the beef on both sides until golden brown. Remove the roast and set aside.
4️⃣ Next, sauté the onion and garlic in the pan until the onion is translucent.
5️⃣ Then, return the roast to the pot, adding the remaining ingredients.
6️⃣ Cover and transfer to the preheated oven, cooking for approximately 3 hours.
