Ingredients:

  1.  2 sprigs fresh thyme
  2.  1 larger yellow onion

Baking & Spices:

  1. 1 tsp brown suga

Bread & Baked Goods:

  1. 1 sheet frozen puff pastr
  2. 1 tbsp oliv Oil
  3. 2 oz chevre (fresh goat cheese)

Instructions:

1. Preheat the oven:
– Preheat your oven to 375°F (190°C).

2. Prepare the onions:

  1.  Peel and thinly slice the yellow onion.
  2.  In a medium skillet, add Olive Oil over medium heat.
  3. Add the sliced onions and cook, stirring occasionally, for about 15 minutes, until the onions soften and begin to caramelize.
  4.  Stir in the brown sugar and a pinch of salt, and continue to cook for another 5-10 minutes, until the onions are golden brown and deeply caramelized. Add the fresh thyme sprigs (you can tie them together with kitchen twine to make removal easier later) and cook for an additional minute, then remove from the heat.
  5. Discard the thyme stems.

3. Prepare the puff pastry:

  1.  Roll out thepuff pastry sheet on a lightly floured surface. Cut the pastry into 4 squares (or more if you want mini tarts).
  2.  Place the pastry squares on a baking sheet lined with parchment paper.

4. Assemble the tarts:

  1.  Divide the caramelized onion mixture evenly among the puff pastry squares, spreading it out in the center.
  2.  Crumble the chevre (goat cheese) over the onions.
  3.  Fold up the edges of the puff pastry slightly to form a small border around the filling.

5. Bake the tarts:

  1.  Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden and crispy, and the cheese is slightly melted.
