 INGREDIENTS:

4 cups potatoes, cubed

1 lb smoked sausage, sliced

1 cup shredded cheddar cheese

1 packet ranch seasoning mix

1 cup sour cream

1 cup mayonnaise

2 tablespoons olive oil

Salt and pepper to taste

1/4 cup chopped green onions (optional, for garnish)

 INSTRUCTIONS:

1. Preheat the oven to 400°F (200°C).

2. In a large bowl, toss the cubed potatoes with olive oil, salt, and pepper.

3. Spread the potatoes on a baking sheet and roast in the preheated oven for 20-25 minutes, until tender and golden brown.

4. In a large skillet over medium heat, cook the smoked sausage slices until browned, about 5-7 minutes.

5. In a separate bowl, mix together the ranch seasoning, sour cream, and mayonnaise.

6. In a large baking dish, combine the roasted potatoes, cooked sausage, and the ranch mixture. Stir well to coat everything evenly.

 NOTES:

For a spicier version, use a spicy smoked sausage or add a pinch of cayenne pepper to the ranch mixture.

You can use different types of cheese for variety, such as mozzarella or pepper jack.

This dish can be made ahead of time and reheated in the oven before serving.
