Fig and Goat Cheese Tart Recipe

Ingredients:
1 sheet puff pastry, thawed Â
3 oz goat cheese, softened
1/2 cup ricotta cheese
1 tbsp honey, plus more for drizzling
1 tsp fresh thyme leaves
Pinch of salt
6-8 fresh figs, sliced
1 tbsp olive oil
Instructions:
1. prepare the pastry Â
Preheat your oven to 375°F (190°C). Lay the puff pastry on a parchment-lined baking sheet, folding in the edges to create a border. Prick the center with a fork to keep it flat.
2. bake the base Â
Bake the puff pastry for 10-12 minutes until golden and puffed. Remove from the oven and let it cool slightly.

In a bowl, mix goat cheese, ricotta, honey, thyme, and a pinch of salt. Spread the mixture evenly over the baked puff pastry.
