Fig and Goat Cheese Tart Recipe

As the aroma of sweet figs and tangy goat cheese fills your kitchen, this tart feels like a warm hug on a crisp day.

Servings: 4-6 slices

Ingredients:

1 sheet puff pastry, thawed  

3 oz goat cheese, softened

1/2 cup ricotta cheese

1 tbsp honey, plus more for drizzling

1 tsp fresh thyme leaves

Pinch of salt

6-8 fresh figs, sliced

1 tbsp olive oil

Instructions:

1. prepare the pastry  

Preheat your oven to 375°F (190°C). Lay the puff pastry on a parchment-lined baking sheet, folding in the edges to create a border. Prick the center with a fork to keep it flat.

2. bake the base  

Bake the puff pastry for 10-12 minutes until golden and puffed. Remove from the oven and let it cool slightly.

3. make the creamy filling  

In a bowl, mix goat cheese, ricotta, honey, thyme, and a pinch of salt. Spread the mixture evenly over the baked puff pastry.

4. top with figs and bake  

Arrange fig slices over the cheese layer. Lightly drizzle with olive oil and bake for another 10 minutes until the figs soften.

5. add the finishing touches  

Remove from the oven and drizzle with more honey. Garnish with a sprinkle of thyme and serve warm or at room temperature.
