Healthy Mediterranean Chicken Salad

This nutritious version of chicken salad incorporates your preferred Mediterranean ingredients with traditional chicken salad. Greek yoghurt, lemon juice, chopped or shredded chicken, crumbled feta cheese, roasted red peppers, and kalamata olives are combined with the mixture. This is delicious in a wrap, on top of lettuce, or on a brioche bread.

Ingredients For Healthy Mediterranean Chicken Salad

  1. 1.5 pounds of chicken breasts, or roughly 3 cups of shredded chicken
  2. Diced two celery stalks
  3. Half a cup of  olives
  4. 1/4 cup chopped roasted red peppers
  5. 1/4 cup finely sliced red onion
  6. 1/4 cup Feta Cheese Crumbles
  7. Three-quarters cup of simple Greek yoghurt
  8. 1/4 cup of mayonnaise
  9. One teaspoon of honey
  10. One teaspoon of lemon juice
  11. Two chopped green onions
  12. Two tsp freshly chopped dill
  13. Three tsp freshly cut parsley

Instructions For Healthy Mediterranean Chicken Salad

  1. Start the oven at 450 degrees Fahrenheit.
  2. Arrange the chicken breasts in a large baking dish in a single layer.
  3. Evenly brush both sides with olive oil, rotating once. Evenly distribute the salt, pepper, and garlic powder over the chicken breasts.
  4. Bake the chicken for 15–17 minutes, or until it is cooked through and 165 degrees Fahrenheit.
  5. When the chicken is cooked through, take it out of the oven and allow it to cool. Add the chicken shreds to a sizable mixing basin.
  6. Mix thoroughly after adding the feta cheese, red onion, roasted red peppers, and celery.
  7. Mix thoroughly after adding the Greek yogurt, mayonnaise, honey, and lemon juice.
  8. Add the parsley, dill, and green onions and stir.
  9. Serve the chicken salad on a sandwich, over greens, in a lettuce wrap, or in a bowl topped with freshly chopped parsley. Keep the leftover chicken salad chilled for up to three days in a tightly closed container.

SERVE THE CHICKEN SALAD:

  • You may serve the salad on a sandwich, in a lettuce wrap, in a bowl with some fresh parsley on top, or on a bed of greens.
