Ingredients:
  1. 750g of Charlotte potatoes with a lengthwise halving and olive oil
  2. One red onion, thinly sliced
  3. One garlic bulb with divided cloves
  4. One lemon, thinly sliced
  5. Eight complete chicken thighs
  6. A small glass of white wine, 12 tiny plum tomatoes
  7. mixed olives (Kalamata and green)
  8. a handful of cut oregano leaves and each 100g of feta

Directions:

  1. Preheat oven to 200°C, 180°F on fan and gas 6. After placing the potatoes on a large roasting tray, season with two tablespoons of olive oil. Add enough oil to coat everything, then roast for 20 minutes.
  2.  Add the chicken thighs, red onion, garlic cloves, and lemon wedges. Season and sprinkle with another tablespoon of oil. Remove after 20 minutes of roasting, and increase the oven’s temperature to 220C/fan 200C/gas. 7. After adding the tomatoes, wine, and olives, return the tray to the oven and continue cooking for an additional 20 minutes.
