Air Fryer Cajun Shrimp Dinner
This quick and simple recipe for Air Fryer Cajun Shrimp combines shrimp, sausage, and an abundance of vibrant veggies, including bell peppers, zucchini, and yellow squash, to create a complete meal.
Ingredients:
- 1 tablespoon of Cajun or Creole seasoning
- 24 extra large jumbo prawns, peeled and cleaned, 1 pound
- Six ounces of fully cooked Turkey/Chicken Andouille sausage or kielbasa*, sliced
- eight ounces of medium zucchini
- sliced into 1/4-inch thick half moons
- eight ounces of medium yellow squash
- sliced into 1/4-inch thick half moons
- one large red pepper, seeded and cut into thin 1-inch pieces
- one-fourth teaspoon of kosher sal
- two tablespoons of olive oil
Instructions;
- Mix the prawns with Cajun seasoning in a big basin and toss to coat.
- Toss with the oil after adding the sausage, bell peppers, squash, and zucchini.
- Set the air fryer to 400°F.
- Transfer the prawns and veggies to the air fryer basket in two batches (if the basket is smaller). Cook for eight minutes, shaking the basket two or three times during this time.
- Repeat with the remaining prawns and vegetables and set aside.
- Return the first batch to the air fryer and cook it for one minute after both batches have finished cooking.
Notes:
Purchase prawns that are still frozen and thaw as needed. Since most prawns arrive at supermarkets frozen, it would be best to purchase it that way and defrost it as needed to ensure that it is as fresh as possible. Thaw prawns in the fridge overnight to defrost them.
