Keto Taco Salad
One of our favourite evening dinners is KETO TACO SALAD. Easy to create, tasty, fresh, and simple! In addition, everyone in the family can personalise their salad by adding their own dressing and toppings.
Ingredients:
- Lean ground beef pound
- Three tsp of taco seasoning
- two tsp water
- Diced two whole romaine hearts
- one avocado, either cubed or sliced
- Half a cup of grape tomatoes
- Four ounces of shredded or cubed cheddar cheese;
- one-half cup chopped green onions
- one-half cup pickled jalapeño slices
- optional avocado ranch salad dressing
Instructions:
- In a medium skillet set over medium heat, add the ground meat. While the beef cooks, crumble it.
- After the steak is thoroughly cooked, remove any surplus oil. After adding the taco seasoning, toss everything together. After adding the water, boil the mixture, stirring now and then, until the liquid is mostly evaporated.
- Toss everything together in a big dish, excluding the salad dressing.
- Divide the salad into four bowls and dress each one with salad dressing, or pour the dressing over the whole salad and toss to coat.
Note:
Notes: Feel free to use any salad dressing that you like. Taco salad is also a fantastic vehicle for a dressing made of ⅓ cup sour cream and ⅓ cup salsa.
