A light and refreshing entree with salty feta and olives and crunchy capsicum.
Ingredients For Capsicum & Cheese Toasties
- Two tablespoons of olive oil

One medium red onion, chopped finely after peeling

Two cloves of peeled and crushed garlic

80g of pitted and halved black olives

Two medium-sized, colored, seeded, and finely sliced capsicums
- 80g crumbled feta
- 2 tbsp balsamic vinegar
- 8 sourdough pieces of bread
Method For This Recipe:
First of Five Steps
Preheat the oven to 180°C (or 160°C if using a fan).
Step Five, Second
Dice all the vegetables finely and combine them in a basin.
Step Three of Five
In a small dish, mix the oil and balsamic and leave aside.
Step Four of Five
Spread the diced vegetables over the sourdough bread on a baking dish, sprinkle the feta crumbles on top, and bake for fifteen minutes.
Step Five of Five
When ready to serve, remove from the oven and pour over the sauce.
