Grilled Salmon with Quinoa Broccoli and Avocado Salad

Ingredients:
• Grilled salmon fillets
• 1 cup quinoa, cooked
• 1 cup steamed broccoli florets
• 1 avocado, sliced
• Cherry tomatoes, halved
• Cucumber, sliced
• Lemon wedges
• Salt and pepper to taste
• Olive oil for drizzling
• Fresh herbs (optional)
Instructions:
1. Preheat grill (medium-high).
2. Season the salmon with salt, pepper, olive oil.
3. Grill the salmon for 4-5 minutes per side (or until cooked).
4. Cook quinoa (follow package instructions).
5. Fluff with fork; set aside.
6. Steam broccoli florets (5 minutes).
7. Let them cool slightly.
8. Combine quinoa, broccoli, cherry tomatoes and cucumber.
9. Toss it gently.
10. Slice/dice avocado.
11. Add the avocado to salad.
12. Top with grilled salmon.
13. Serve immediately.
