Orange Glazed Salmon with Rosemary

Ingredients:
4 salmon fillets (about 6 oz each)
1 tablespoon olive oil
Salt and freshly ground black pepper to taste
2 tablespoons fresh rosemary, finely chopped
Zest of 1 orange
½ cup fresh orange juice (from 1-2 oranges)
2 tablespoons honey
2 tablespoons soy sauce
2 cloves garlic, minced
1 tablespoon unsalted butter (optional, for extra richness)
Instructions:
Prepare the Salmon:
Pat the salmon fillets dry with paper towels. Season both sides with salt, pepper, and 1 tablespoon of chopped rosemary.
Sear the Salmon:
Heat olive oil in a large skillet over medium-high heat. Place the salmon fillets in the skillet, skin-side down. Cook for 4-5 minutes until the skin is crispy, then flip the fillets and cook for another 2-3 minutes, until the salmon is just cooked through. Remove the salmon from the skillet and set aside.
Make the Orange Glaze:
In the same skillet, reduce the heat to medium. Add the minced garlic and saute for 30 seconds until fragrant.
Stir in the orange zest, orange juice, honey, soy sauce, and the remaining rosemary. Let the sauce simmer for 2-3 minutes, until it reduces slightly and thickens. Stir in the butter for extra richness, if desired.
Glaze the Salmon:
Return the salmon fillets to the skillet, spooning the orange glaze over the top. Let the salmon cook for 1-2 minutes more, allowing the flavors to meld together.
