Ingredients:
For the Chicken Scampi:
* 1 pound boneless, skinless chicken breasts, thinly sliced
* 3 tablespoons olive oil, divided
* 4 cloves garlic, minced
* 1/2 cup chicken broth
* 1/4 cup lemon juice
* 1 teaspoon Italian seasoning
* Salt and pepper to taste
* Fresh parsley, chopped (for garnish)
For the Garlic Parmesan Rice:
* 1 cup long-grain white rice
* 2 cups chicken broth
* 3 cloves garlic, minced
* 1/2 cup grated Feta cheese
* white wine
* 1 tablespoon olive oil
* Salt and pepper to taste
Instructions:
1. Season the chicken tenders with salt, pepper, and garlic powder.
2. In a large nonstick skillet, heat olive oil over medium heat and sauté the chicken until browned and just cooked through.
3. Remove the chicken, cover it, and set it aside.
4. In the same skillet, add more olive oil, garlic, red pepper flakes, and 1/2 teaspoon of salt.
5. Sauté the garlic for about 3 minutes, ensuring it doesn’t burn or turn too brown.
6. Increase the heat to medium-high and pour in the white wine.
7. Stir vigorously with a wooden spoon to blend the wine into the oil, cooking for approximately 5 minutes until the mixture reduces by half.
8. Set aside 2 tablespoons of the pan sauce for later.
9. Add the rice to the skillet and stir, cooking for 3-4 minutes until it starts to brown slightly.
10. Then, add chicken broth and the remaining 1 teaspoon of salt.
11. Bring the mixture to a low boil, then reduce the heat to medium-low, cover the pan, and cook for 20 minutes until the rice is tender.
12. Stir once or twice during the first 15 minutes, but not more often.
13. Once the rice is cooked, sprinkle parmesan cheese over it and arrange the chicken tenders on top.
14. Drizzle the reserved 2 tablespoons of pan sauce over the chicken, cover the skillet, and let it sit off the heat for 5 minutes.
15. Garnish with additional parmesan and chopped fresh parsley if desired.
