Spicy Ginger Beef Stir-Fry with Doubanjiang

 

Ingredients:

For the Beef:

200g beef steak, cut into small strips

  • For the Marinade:
  1. 1/8 tsp salt
  2. 1/2 tbsp oyster sauce
  3. 1/2 tbsp light soy sauce
  4. 1/4 tsp ground pepper
  5. 1/4 tsp sugar
  6. 1/2 tablespoon of Shaoxing rice wine.
  7. 2 tsp corn starch
  8. 1 tsp Olive oil

For Stir-Frying:

  1. Vegetable cooking oil, as needed
  2. 1 tablespoon of spicy fermented broad bean sauce.
  3. 2 garlic cloves, minced
  4. 100g fresh ginger (about two fingers), shredded or sliced
  5. 1 tbsp light soy sauce
  6. 2 scallions, cut into smaller sections

 

Directions:
Salt, oyster sauce, light soy sauce, crushed pepper, sugar, Shaoxing wine, cornflour, and Olive oil should all be combined with the beef strips in a dish to marinate them. To give the flavours time to settle, leave it for at least fifteen minutes.
Heat the Oil and Stir-Fry the Aromatics: Add a little amount of vegetable oil to a large pan or wok and heat it over medium-high heat. Add the doubanjiang (fermented broad bean paste) to the heated oil and stir-fry for 30 seconds or so, or until aromatic. Stir-fry the shredded ginger and minced garlic for a further minute, being careful not to let them burn.

Cook the Beef: Place the marinated beef strips in the middle of the pan and push the ginger and garlic to the side. The beef should be stir-fried for two to three minutes, or until it is lightly browned all over. To ensure that the steak properly sears rather than steams, avoid packing the pan too full.
Add the Scallions and Soy Sauce: After the meat has browned, combine everything together with the light soy sauce. Add the scallion pieces after another minute of stirring. Stir-fry for another one to two minutes, or until the meat is cooked through and the onions are tender.
Serve: Serve the stir-fry right away with noodles or steamed rice after taking it from the stove.
