Cauliflower Hash Browns
These cauliflower hash browns are crispy, low-carb patties made by ricing cauliflower, squeezing out excess moisture, and cooking them with egg, cheese, and seasonings!
Ingredients:
* 1 medium head of cauliflower (about 4 cups riced)
* 1 large egg
* 1 cup shredded cheese (Feta or Goat works well)
* 1/2 teaspoon garlic powder
* 1/2 teaspoon onion powder
* Salt and pepper to taste
* Olive oil for frying
* 1/4 cup green onions, chopped (optional)
Instructions:
1. Cut cauliflower into florets and pulse them in a food processor until they resemble rice, or grate them with a box grater.
2. Transfer the riced cauliflower to a microwave-safe bowl, cover with a damp paper towel, and microwave for 4-5 minutes until softened.
3. Let it cool slightly.
4. Once cooled, place the cauliflower in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible to ensure crispy hash browns.
5. In a large bowl, combine the riced cauliflower with egg, shredded cheese, green onions (optional), garlic powder, onion powder, salt, and pepper.
6. Stir until well mixed.
7. Take a portion of the mixture and form small patties, about 2-3 inches in diameter.
8. Heat a bit of olive oil in a skillet over medium heat.
9. Add the patties, working in batches if needed.
10. Cook for 4-5 minutes on each side until golden brown and crispy.
11. Once cooked, remove the hash browns from the skillet and place them on paper towels to drain excess oil.
12. Serve warm as a tasty side dish or breakfast!
