Zucchini Fritters
These zucchini fritters are made by grating zucchini, removing excess moisture, and mixing it with flour, eggs, and seasonings. The mixture is formed into patties and fried until golden and crispy, then served warm with a dipping sauce!
Ingredients:
* 2 medium zucchinis, grated
* 1 teaspoon salt
* 1/2 cup all-purpose flour (or gluten-free flour if preferred)
* 2 large eggs
* 1/4 cup chopped green onions or chives
* 1 teaspoon garlic powder
* 1/2 teaspoon black pepper
* Olive oil for frying
* 1/4 cup grated Parmesan cheese (optional)
Instructions
1. Grate the zucchinis and place them in a clean kitchen towel or cheesecloth.
2. Sprinkle with salt and let sit for 10 minutes to draw out excess moisture.
3. After 10 minutes, squeeze out as much liquid as possible.
4. In a large bowl, combine the grated zucchini, flour, Parmesan (if using), eggs, green onions, garlic powder, and black pepper.
5. Stir until everything is well mixed.
6. In a large skillet, heat about ¼ inch of oil over medium heat.
7. Using a spoon or your hands, scoop out small portions of the mixture and shape them into patties.
8. Carefully place the patties into the hot oil, cooking in batches if necessary.
9. Fry for 3-4 minutes on each side, until golden brown and crispy.
10. Once cooked, transfer the fritters to a plate lined with paper towels to absorb excess oil.
11. Serve warm with a dipping sauce like yogurt or sour cream.
