  2. 1/2 cup green olives (about 20), pitted

  5. 1 tablespoon honey
  6. 1 teaspoon lemon zest
  7. 1 teaspoon kosher salt
  8. 1/2 teaspoon freshly cracked black pepper
  9. 2 small-medium beets, boiled, sliced, and diced
  10. 1/2 cup parsley, finely minced
  11. 1/2 cup mint, finely minced

Directions:

Marinate Onions and Olives:
