Maple Sriracha Salmon with Coconut Rice & Mango Avocado Salsa Bowl with Chili Mayo

This Maple Sriracha Salmon Bowl combines sweet, spicy, and creamy flavors in one delicious dish! Ingredients:
Maple Sriracha Salmon:

  1. 1 lb salmon, cut into bite-sized pieces
  2. 1/4 cup maple syrup
  3. 2 tbsp sriracha sauce
  4. 1 tbsp soy sauce
  5. 1 tbsp olive oil
  6. Salt & pepper to taste

Coconut Rice:

  1. 1 cup jasmine rice
  2. 1 cup coconut milk
  3. 1/2 cup water
  4. 1/2 tsp salt

Mango Avocado Salsa:

  1. 1/2 cup diced mango
  2. 1 avocado, diced
  3. 1/4 cup diced red onion
  4. 1 tbsp lime juice
  5. Fresh cilantro, chopped (optional)
  6. Salt & pepper to taste

Chili Mayo:

  1. 1/4 cup mayonnaise
  2. 1-2 tsp sriracha (adjust for spice)
  3. 1 tsp lime juice

Instructions:

  1. Prepare the Coconut Rice: Rinse jasmine rice, then combine with coconut milk, water, and salt in a saucepan. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until the rice is tender and infused with coconut flavor.
  2. Make the Maple Sriracha Glaze: In a bowl, whisk together maple syrup, sriracha, and soy sauce.
  3. Cook the Salmon: Heat olive oil in a skillet over medium heat. Season salmon pieces with salt and pepper, then add to the skillet. Sear the salmon for 2-3 minutes on each side until cooked through and lightly golden. Pour the maple sriracha glaze over the salmon and cook for an additional 2-3 minutes, stirring to coat the salmon in the sticky glaze.
