One Pot Chicken and Vegetables Skillet
This one-pot dish is a great option for a quick, healthy meal with lean protein and plenty of veggies!

Ingredients:
* 1 lb (450g) skinless, boneless chicken breast, cut into 1-inch pieces
* 2 zucchini, slice
* 2 red bell peppers, chopped into chunks
* 1 broccoli crown, broken into florets
* 1/2 onion, sliced
* 1/4 teaspoon salt
* 1/4 teaspoon pepper
* 2 tablespoons olive oil
* 2 tablespoons Cajun seasoning
* 1/4 cup (60ml) low-sodium chicken broth
* 1 tablespoon fresh chopped parsley, for garnish
* 1/2 teaspoon red chili pepper flakes (optional)

Instructions:
1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
2. Add the chicken pieces, season with salt, pepper, and 1 tablespoon of Cajun seasoning.
3. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
4. Remove the chicken from the skillet and set aside.
5. In the same skillet, add the remaining tablespoon of olive oil.
6. Add the onion, bell peppers, and zucchini.
7. Cook for 3-4 minutes until they start to soften.
8. Add the broccoli florets and continue to cook for another 2-3 minutes.
9. Return the chicken to the skillet with the vegetables.
10. Sprinkle the remaining tablespoon of Cajun seasoning over the mixture.
11. Pour in the low-sodium chicken broth and stir everything together.
12. Lower the heat to medium-low and let everything simmer for 5-7 minutes, allowing the flavors to meld and the vegetables to finish cooking.
13. Garnish with freshly chopped parsley and a sprinkle of red chili pepper flakes if you like some heat.
14. Serve hot.
