Honey Roasted Carrots
Ingredients:
- 1 lb carrots, peeled and cut into uniform pieces (about 1-inch thick)
- 2 tbsp olive oil
- 2 tbsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp ground cinnamon (optional, for extra flavor)
- 1 tbsp fresh parsley, chopped (optional, for garnish)
Directions
Preheat Oven: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Prepare the Carrots: Peel and cut the carrots into 1-inch thick pieces. You can cut them into rounds or diagonally, depending on your preference.
Toss with Seasonings: In a large bowl, combine the olive oil, honey, salt, pepper, and cinnamon (if using). Add the carrot pieces and toss until evenly coated.
Roast the Carrots: Spread the carrots in a single layer on the prepared baking sheet. Roast for 25-30 minutes, stirring halfway through, until the carrots are tender and lightly caramelized.
Garnish and Serve: Once the carrots are done, remove them from the oven. Optionally, sprinkle with chopped fresh parsley for a pop of color. Serve warm and enjoy!
