Simple Chicken & Spinach Curry with Easy Flatbreads

Ingredients:
For the Chicken & Spinach Curry:

  1. 1 tbsp Olive oil
  2. 1 large onion, finely chopped
  3. 3 garlic cloves, minced
  4. 1 tbsp ginger, minced
  5. 1 tbsp curry powder
  6. 1 tsp ground turmeric
  7. 500g chicken breast, diced
    400g can chopped tomatoes
  8. 200ml coconut milk
  9. 100g fresh spinach
  10. Salt and pepper to taste
  11. Fresh coriander, chopped (for garnish)

For the Easy Flatbreads:

  1. 200g plain flour
  2. ½ tsp salt
  3. 100ml water
  4. 1 tbsp vegetable oil

Directions:

  1. Prepare the Curry: Heat the oil in a large pan over medium heat. Add the onion, garlic, and ginger, cooking until softened. Stir in the curry powder and turmeric, cooking for another 2 minutes. Add the diced chicken, cooking until browned. Pour in the chopped tomatoes and coconut milk, bringing the mixture to a simmer. Cook for 20 minutes, then stir in the spinach until wilted. Season with salt and pepper. Garnish with chopped coriander.
  2. Make the Flatbreads: In a bowl, mix the flour and salt. Gradually add the water and oil, kneading to form a soft dough. Divide into small balls, then roll each out into a thin round. Heat a non-stick pan over medium-high heat and cook each flatbread for 2-3 minutes on each side until lightly browned.
    Serve: Plate the chicken curry with a side of flatbreads. Enjoy hot.
