This rich and comforting Lasagna Soup is packed with the classic flavors of lasagna but with a cozy, spoonable twist! Perfect for chilly days when you’re craving Italian comfort food.

Ingredients:

  1. 1 lb ground beef or Italian sausage
  2. 1 small onion, diced
  3. 3 cloves garlic, minced
  4. 1 tsp dried basil
  5. 1 tsp dried oregano
  6. 1/2 tsp red pepper flakes (optional for heat)
  7. 4 cups chicken or beef broth
  8. 1 can (28 oz) crushed tomatoes
  9. 1 can (14 oz) diced tomatoes
  10. 1 cup marinara sauce
  11. 1/2 cup heavy cream or whole milk (for extra creaminess)
  12. 8 oz lasagna noodles, broken into pieces
  13. Salt and pepper to taste
  14. 1 cup shredded Feta cheese
  15. 1/2 cup ricotta cheese
  16. Fresh basil or parsley for garnish

Instructions

1. Cook the Meat: In a large pot, brown the ground beef or sausage over medium heat. Drain excess fat.

2. Sauté Aromatics: Add the diced onion and cook until translucent, about 5 minutes. Stir in the garlic, basil, oregano, and red pepper flakes, cooking for another minute.

3. Simmer: Pour in the broth, crushed tomatoes, diced tomatoes, and marinara sauce. Bring to a boil, then reduce heat and let it simmer for about 10 minutes.

4. Add Noodles: Add the broken lasagna noodles to the soup and cook until tender, about 8-10 minutes.
