Cajun Shrimp Fried Rice

Ingredients:

Protein:

  1. 1 lb shrimp, peeled and deveined
  2. 1 tablespoon Cajun seasoning (adjust to taste)

Vegetables:

  1. 1 small onion, diced
  2. 1 small bell pepper, diced (red, green, or yellow)
  3. 2 cloves garlic, minced
  4. 1/2 cup frozen peas and carrots, thawed (optional)
  5. 2 green onions, sliced (for garnish)

Grains:

  1. 4 cups cooked rice (preferably day-old, cold rice works best)

Sauce:

  1. 2 tablespoons soy sauce
  2. 1 tablespoon hot sauce (optional, for extra heat)
  3. 1 tablspoon Worcestershire sauce

Oils and Seasoning:

  1. 2 tablespoons Olive oil 
  2. 1 teaspoon sesame oil (optional, for flavor)
  3. Salt and black pepper, to taste

Instructions:

1.Season the Shrimp:
Toss the shrimp with Cajun seasoning and set aside.

2.Cook the Shrimp:

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp and cook for 2-3 minutes per side until pink and cooked through.
  3. Remove from the skillet and set aside.

3.Cook the Vegetables:

  1. In the same skillet, add the remaining oil.
  2. Add the onion and bell pepper, Cook for 2-3 minutes until softened.
  3. Stir in the garlic, cooking for another minute until fragrant.

4.Add the Rice:

  1. Push the vegetables to one side of the skillet and add the cold rice.
  2. Stir-fry the rice, breaking up any clumps, for about 2-3 minutes.

5.Mix in the Sauces:

  1. Combine the soy sauce, hot sauce, and Worcestershire sauce in a small bowl, then pour over the rice.
  2. Toss everything together until the rice is evenly coated and heated through.

5.Combine Shrimp and Vegetables:

  1. Return the cooked shrimp to the skillet and mix with the rice and vegetables.
  2. Add frozen peas and carrots (if using), cooking for another 2 minutes until heated through.
