Egg Roll Soup

Ingredients:
- 1 pound ground beef, chicken or turkey (whichever you prefer)
- 2 tablespoons olive oil
- 1 medium white onion, peeled and diced
- 2 medium carrots, peeled and diced
- 3 cloves garlic, minced
- 1 small green cabbage, chopped into bite-sized pieces
- 6–8 cups chicken or vegetable stock
- 2 teaspoons ground ginger
- 1 teaspoon toasted sesame oil

- Thinly-sliced green onions
- Homemade fried egg roll wrappers (or store-bought wonton strips)
Instructions:
1. In a large pot, heat 2 tablespoons olive oil over medium heat.
2. Add the 1 pound ground beef and cook until browned, breaking it up with a spoon as it cooks.
3. Once cooked through, remove the beef from the pot and set it aside.
4. In the same pot, add a little more oil if needed, then sauté the 1 medium onion (diced), 2 medium carrots (diced), and 3 minced garlic cloves until softened, about 5-7 minutes.
5. Add the chopped green cabbage to the pot and cook for another 2-3 minutes, allowing it to wilt slightly.
6. Pour in the 6–8 cups chicken or vegetable stock, then stir in the 2 teaspoons ground ginger and 1 teaspoon toasted sesame oil.
7. Bring the soup to a simmer and cook for 10-15 minutes to allow the flavors to combine.
8. Add the cooked ground beef back into the pot and stir.
9. Let it simmer for an additional 5-10 minutes to heat through.
10. Ladle the soup into bowls, and top with your choice of toasted sesame seeds, thinly-sliced green onions, and homemade fried egg roll wrappers or store-bought wonton strips for extra crunch.
