Mushroom Frittata Recipe

A mushroom frittata is a versatile and delicious dish perfect for breakfast, brunch, or a light dinner. This Italian-inspired recipe combines tender mushrooms with fluffy eggs, cheese, and aromatic herbs for a savory and satisfying meal. It’s easy to make, highly customizable, and pairs beautifully with fresh salads or crusty bread.

Ingredients:

2 tablespoons olive oil

16 ounces (454 g) button mushrooms, sliced

8 large eggs

¼ cup (60 g) sour cream

¼ teaspoon (1.5 g) sea salt

¼ teaspoon (0.5 g) black pepper

¼ teaspoon (0.5 g) dried thyme

½ cup (50 g) scallions (green parts), chopped

½ cup (50 g) parmesan cheese, grated

Olive oil spray

Instructions:

1. Preheat the Oven:

Preheat your oven to 375°F (190°C).

2. Cook the Mushrooms:

Heat 2 tablespoons of olive oil in an oven-safe skillet over medium heat.

Add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until they release their moisture and become golden.

3. Prepare the Egg Mixture:

In a mixing bowl, whisk together the eggs, sour cream, sea salt, black pepper, and dried thyme until well combined.

4. Add Scallions and Parmesan:

Stir in the chopped scallions and grated parmesan cheese into the egg mixture.

5. Combine and Cook:

Pour the egg mixture over the cooked mushrooms in the skillet.

Stir gently to distribute the mushrooms evenly.

6. Bake the Frittata:

Transfer the skillet to the preheated oven.

Bake for 15-20 minutes, or until the frittata is set and lightly golden on top.

7. Serve:

Remove the skillet from the oven and let the frittata cool slightly.

Slice into wedges and serve warm.

Tips:

Make Ahead: Frittata can be made ahead and served warm, at room temperature, or even cold.

Vegetable Variations: Add spinach, bell peppers, or tomatoes for extra flavor.

Cheese Options: Swap parmesan with cheddar or feta for a different taste.

Customize ingredients: Add spinach, bell peppers, or cooked bacon for variety.

Use the right pan: An oven-safe, nonstick skillet is ideal for easy release and even cooking.

Check doneness: The frittata is ready when the center is firm and no longer jiggly.

No oven? Finish cooking on the stovetop over low heat with a lid to set the top.

Storage: Leftovers keep well in the fridge for 2–3 days. Reheat gently on the stovetop or in the microwave.
