Grilled Salmon Kabobs

Ingredients

For the skewers:

  • 2 lbs salmon, skin removed and cubed
  • 2 lemon
  •  Wooden skewers

For the Lemon Herb Marinade:

  • 2 tablespoons olive oil
  • 1 large lemon, juiced & zested
  • 2 cloves garlic, grated
  • 1 teaspoon dried oregano
  •  ½ teaspoon salt
  •  ¼ teaspoon black pepper

Instructions

1. Soak the wooden skewers in water for about 15-20 minutes to prevent burning while grilling.

2. In a bowl, combine the olive oil, lemon juice, lemon zest, grated garlic, dried oregano, salt, and black pepper. Whisk until the marinade is well mixed.

3. Place the cubed salmon in a shallow dish and pour the marinade over it. Gently toss to coat the salmon evenly. Let it marinate for 15-20 minutes.

4. While the salmon marinates, preheat the grill to medium-high heat.

5. Thread the marinated salmon onto the wooden skewers, alternating with lemon slices if desired for extra flavor.

6. Grill the salmon kabobs for about 3-4 minutes per side or until cooked through and slightly charred.

7. Remove the kabobs from the grill . You can also sprinkle with fresh chopped parsley or dill for added color and flavor. Enjoy!

1. Soak the skewers: Soak wooden skewers in water for at least 30 minutes before grilling to prevent them from burning.
2. Marinate the salmon: Marinate the salmon in a mixture of olive oil, lemon juice, and herbs like thyme and rosemary for added flavor.
