Ingredients:
1.5 lbs chicken breast, cut into 1-inch pieces
2 medium zucchini, chopped
3 large carrots, sliced
4 cloves garlic, minced
2 tablespoons olive oil
3 tablespoons honey
2 tablespoons soy sauce
1 tablespoon rice vinegar
2 teaspoons cornstarch
1/4 cup water
1/2 teaspoon black pepper
1/2 teaspoon ginger powder
1/4 cup fresh parsley, chopped
Sesame seeds (optional)
Instructions:
- Whisk together honey, soy sauce, rice vinegar, cornstarch, water, pepper, and ginger
- Set aside
- Heat 1 tablespoon oil in large skillet over medium-high heat
- Cook chicken pieces for 5-6 minutes until golden
- Remove from pan and set aside
- Add remaining oil to pan
- Sauté carrots for 3-4 minutes
- Add zucchini and garlic, cook 2-3 minutes more
Return chicken to pan
Pour sauce over mixture
Simmer 2-3 minutes until sauce thickens
Garnish with parsley and sesame seeds
