Ingredients:

2 hard-boiled eggs, sliced

1 avocado, sliced

1/2 cup cherry tomatoes, halved

1/4 cup sweet corn kernels

1/4 cup diced red onion

1/4 cup diced green bell pepper

Fresh cilantro, chopped

1 tbsp crumbled feta cheese

Paprika or chili powder for garnish

Salt and black pepper to taste

Drizzle of olive oil

Squeeze of lime juice

Instructions:

Slice the boiled eggs and avocado.

Halve the cherry tomatoes.

Dice the onion and green bell pepper.

Start by arranging the eggs, avocado, cherry tomatoes, corn, onion, and bell pepper in sections within a bowl.

Sprinkle crumbled feta cheese, paprika, salt, and black pepper over the top.
