Ingredients

For the Tofu Nuggets:

1 (14-ounce) block extra-firm tofu

2 tbsp soy sauce (or tamari for gluten-free)

1 tbsp olive oil (or sesame oil for extra flavor)

1 tbsp cornstarch (for extra crispiness)

For the Breading:

½ cup breadcrumbs (panko for extra crunch, or gluten-free breadcrumbs)

¼ cup nutritional yeast (or grated

½ tsp garlic powder

½ tsp onion powder

½ tsp smoked paprika

¼ tsp salt

¼ tsp black pepper

For Dipping (Optional):

Instructions

1. Press the Tofu:

Drain the tofu and press it for 15–20 minutes using a tofu press or by wrapping it in a clean towel and placing a heavy object on top. This removes excess moisture, making it crispier when baked.

2. Cut and Marinate:

Cut the pressed tofu into nugget-sized pieces (about cubes or rectangles).

In a bowl, toss the tofu pieces with soy sauce, olive oil, and cornstarch until evenly coated.

3. Prepare the Breading:

In a shallow bowl, mix breadcrumbs, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and black pepper.

4. Coat the Tofu:

Dip each tofu piece into the breadcrumb mixture, pressing gently so the coating sticks.

5. Bake:

Preheat oven to 400°F (200°C).

Line a baking sheet with parchment paper and arrange the tofu nuggets in a single layer.
