This crustless zucchini quiche is a delicious, low-carb, and keto-friendly dish perfect for breakfast, brunch, or a light dinner. It’s packed with tender zucchini, cheese, and eggs, making it both satisfying and nutritious without the extra carbs from a crust.
Ingredients
Base:
2 medium zucchinis, grated (2 cups)
1/2 tsp salt (for draining zucchini)
6 large eggs
1/2 cup heavy cream (or unsweetened almond milk for a lighter option)
1 cup shredded cheese (cheddar, mozzarella, or Swiss)
1/4 cup grated Parmesan cheese (optional, for extra flavor)
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black pepper
1/2 tsp dried Italian seasoning (or fresh chopped herbs like basil or parsley)
1/4 cup chopped green onions
1/2 cup diced cooked bacon or ham (optional for extra protein)
Instructions
Step 1: Prep the Zucchini
1. Grate the zucchini using a box grater or food processor.
2. Sprinkle the grated zucchini with 1/2 tsp salt and let it sit for 10 minutes in a colander to draw out moisture.
3. Squeeze out excess liquid using a clean kitchen towel or cheesecloth to prevent a watery quiche.
Step 2: Prepare the Egg Mixture
- In a large mixing bowl, whisk together the eggs, heavy cream, garlic powder, onion powder, black pepper, and Italian seasoning.
- Stir in the shredded cheese, Parmesan, and green onions (if using).
Step 3: Assemble and Bake
1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.
2. Add the drained zucchini (and cooked bacon/ham, if using) into the egg mixture and stir well.
3. Pour the mixture into the prepared dish and spread evenly.
4.Bake for 30-35 minutes, or until the quiche is set in the center and golden on top.
5.Let it cool for 5-10 minutes before slicing and serving.
Recipe Notes & Tips
Preventing a watery quiche: Draining and squeezing zucchini is crucial to avoid excess moisture in the quiche.
Cheese options: Cheddar, Swiss, Gruyere, feta, or goat cheese all work well.
Adding protein: Bacon, ham, or cooked sausage can enhance flavor and make it heartier.
Dairy-free option: Use unsweetened almond milk and dairy-free cheese.
Storage: Store leftovers in the fridge for up to 4 days. Reheat gently in the oven or microwave.
