Ingredients 

Base:

2 medium zucchinis, grated (2 cups)

1/2 tsp salt (for draining zucchini)

6 large eggs

1/2 cup heavy cream (or unsweetened almond milk for a lighter option)

1 cup shredded cheese (cheddar, mozzarella, or Swiss)

1/4 cup grated Parmesan cheese (optional, for extra flavor)

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp black pepper

1/2 tsp dried Italian seasoning (or fresh chopped herbs like basil or parsley)

1/4 cup chopped green onions

1/2 cup diced cooked bacon or ham (optional for extra protein)

Instructions

Step 1: Prep the Zucchini

1. Grate the zucchini using a box grater or food processor.

2. Sprinkle the grated zucchini with 1/2 tsp salt and let it sit for 10 minutes in a colander to draw out moisture.

3. Squeeze out excess liquid using a clean kitchen towel or cheesecloth to prevent a watery quiche.

Step 2: Prepare the Egg Mixture

  1. In a large mixing bowl, whisk together the eggs, heavy cream, garlic powder, onion powder, black pepper, and Italian seasoning.
  2. Stir in the shredded cheese, Parmesan, and green onions (if using).

Step 3: Assemble and Bake
