Ingredients 

For the Chicken Marinade:

1 ½ lbs boneless, skinless chicken thighs (or breasts)

3 tbsp olive oil

2 tbsp lemon juice (freshly squeezed)

3 cloves garlic, minced

1 tsp dried oregano

1 tsp dried thyme (or ½ tsp fresh thyme)

1 tsp ground cumin

½ tsp paprika

½ tsp salt

¼ tsp black pepper

For the Tzatziki Sauce:

1 cup Greek yogurt (full-fat for best flavor)

½ cup grated cucumber (squeeze out excess water)

1 tbsp lemon juice

1 tbsp olive oil

1 clove garlic, minced

1 tbsp fresh dill (or 1 tsp dried)

¼ tsp salt

¼ tsp black pepper

For Serving:

4-6 pita breads (or low-carb wraps for keto)

1 cup shredded lettuce

½ cup diced tomatoes

½ cup thinly sliced red onion

¼ cup crumbled feta cheese (optional)

Instructions

Step 1: Marinate the Chicken

1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, cumin, paprika, salt, and pepper.

2. Add the chicken and toss to coat. Cover and marinate for at least 30 minutes (or overnight for best flavor)

Step 2: Make the Tzatziki Sauce

3. Grate the cucumber and squeeze out excess water using a towel.

4. In a bowl, mix Greek yogurt, cucumber, lemon juice, olive oil, garlic, dill, salt, and pepper. Refrigerate until ready to serve.

Step 3: Cook the Chicken

5. Heat a grill pan or skillet over medium-high heat. Cook the chicken for 4-5 minutes per side until golden brown and cooked through (internal temp: 165°F/74°C).

6. Let the chicken rest for 5 minutes, then slice into strips.

Step 4: Assemble the Gyros

7. Warm the pita bread and fill each with chicken, lettuce, tomatoes, onions, and tzatziki sauce. Sprinkle with feta cheese, if using.
