Veggie Lollipop 

Veggie lollipops are a fun and delicious appetizer made with a mix of colorful vegetables, herbs, and spices, shaped into balls, skewered on sticks, and fried to crispy perfection. These are perfect for kids, parties, or as a unique snack. Serve them with a spicy dip or a tangy chutney for extra flavor!

Ingredients

For the Veggie Mixture:

1 cup boiled and mashed potatoes

½ cup grated carrots

½ cup finely chopped bell peppers (red, yellow, or green)

½ cup finely chopped cabbage

¼ cup boiled corn kernels (mashed slightly)

¼ cup finely chopped onion

1 teaspoon ginger-garlic paste

2 tablespoons chopped coriander leaves

1 green chili, finely chopped (optional for spice)

½ teaspoon red chili powder

½ teaspoon garam masala

½ teaspoon black pepper powder

½ teaspoon salt (adjust to taste)

¼ teaspoon chaat masala (optional for extra tang)

2 tablespoons bread crumbs (for binding)

For Coating:

¼ cup all-purpose flour

2 tablespoons cornflour (or rice flour for extra crispiness)

¼ teaspoon salt

¼ cup water (adjust as needed)

½ cup breadcrumbs (for coating)

Other:

Oil for deep frying

Lollipop sticks or skewers

Instructions

1. Prepare the Veggie Mixture

In a mixing bowl, combine mashed potatoes, carrots, bell peppers, cabbage, corn, and onions.

Add ginger-garlic paste, coriander leaves, green chili, and spices (red chili powder, garam masala, black pepper, salt, chaat masala).

Mix well, then add breadcrumbs to bind the mixture.

2. Shape the Lollipops

Take a small portion of the mixture and roll it into a round ball.

Insert a lollipop stick or skewer into each ball and gently reshape if needed.

3. Prepare the Batter & Coating

In a bowl, mix all-purpose flour, cornflour, salt, and water to make a smooth, thick batter.

Dip each veggie lollipop into the batter, then roll in breadcrumbs for a crispy coating.

4. Fry the Lollipops

Heat oil in a pan over medium heat.

Deep fry the veggie lollipops until golden brown and crispy (about 3-4 minutes).

Drain on paper towels to remove excess oil.

5. Serve & Enjoy!

Serve hot with ketchup, green chutney, or spicy mayo dip.
