Crispy Broccoli Fritters
These Crispy Broccoli Fritters are a delicious and healthy way to enjoy broccoli. Ingredients

For the Fritters:
2 cups broccoli florets (chopped into small pieces)
½ cup shredded cheddar cheese
¼ cup grated Parmesan cheese
½ cup breadcrumbs (or almond flour for a low-carb option)
2 large eggs (beaten)
¼ cup onion (finely chopped)
1 clove garlic (minced)
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon smoked paprika (optional)
For Cooking:
2 tablespoons olive oil (for frying)
For Serving (Optional):
Sour cream, Greek yogurt, or ranch dressing for dipping
Instructions
1. Cook the Broccoli:
Bring a pot of water to a boil and cook the broccoli for 2-3 minutes until slightly tender.Drain and rinse with cold water to stop cooking, then finely chop.
2. Make the Fritter Mixture:
In a large bowl, combine chopped broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, eggs, onion, garlic, salt, black pepper, and smoked paprika.
Mix well until the ingredients stick together. If the mixture is too wet, add more breadcrumbs; if too dry, add a little water or an extra egg.
3. Form the Fritters:
Take about 2 tablespoons of the mixture and form it into small patties.
4. Cook the Fritters:
Heat olive oil in a nonstick skillet over medium heat.Cook the fritters for 3-4 minutes per side, until golden brown and crispy.Transfer to a paper towel-lined plate to drain excess oil.
5. Serve & Enjoy:
Serve warm with your favorite dipping sauce.

I just made these and they are very easy and tasty. I added a packet of ground chia and flaxseed since I had one packet left, but didn’t get the appealing appearance your picture had. My was more brown. I would leave it out next time. Ty for taking the time to post.
