Sweet Potatoes with Feta and Cranberry Glaze recipe
Ingredients:
For the Sweet Potatoes:
4 medium sweet potatoes
1 tablespoon olive oil
Salt and pepper to taste
1/2 teaspoon ground cinnamon (optional)

1 cup fresh or frozen cranberries
1/2 cup orange juice (or water)
2 tablespoons honey or maple syrup
1/2 tablespoon balsamic vinegar

Instructions:
1. Roast the Sweet Potatoes:
Preheat your oven to 400°F (200°C).
Wash and peel the sweet potatoes, then cut them into 1-inch cubes.
Place the cubed sweet potatoes on a baking sheet. Drizzle with olive oil and season with salt, pepper, and cinnamon (if using).

Taste and adjust sweetness or acidity by adding more honey or vinegar if needed. Remove from heat.
