Tortilla Quiche Bake
Ingredients:
6 large flour tortillas (soft taco size)
1 lb ground sausage (or bacon, turkey sausage, or ham)
1 small onion, diced
1 bell pepper, diced (optional)
1 ½ cups shredded cheddar cheese (or a mix of your favorite cheeses)
6 large eggs
1 cup milk (whole or 2%)
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Salt and pepper to taste
1 cup salsa (optional, for serving)
Fresh herbs (like cilantro or parsley, optional, for garnish)
Instructions:
1. Preheat your oven:
Preheat the oven to 350°F (175°C).
2. Cook the sausage:
In a large skillet, cook the ground sausage (or your choice of protein) over medium heat. Break it up with a spoon as it cooks. Once browned, drain any excess fat. Add the diced onion and bell pepper (if using) to the skillet, and cook for another 3-4 minutes until softened. Remove from heat and set aside.
3. Prepare the egg mixture:
In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, paprika, salt, and pepper until well combined.
4. Assemble the quiche bake:
Spray a 9×13-inch baking dish with non-stick cooking spray. Place the tortillas in the dish, overlapping them to cover the bottom completely. You may need to cut the tortillas into halves or quarters to fit the shape of the dish.
Layer half of the cooked sausage mixture over the tortillas. Then sprinkle half of the shredded cheddar cheese on top.
Repeat the layers: add the remaining tortillas, sausage mixture, and cheese.
5. Pour the egg mixture:
Carefully pour the egg mixture evenly over the layers, making sure everything is well coated.
6. Bake the quiche:
Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the eggs are fully set and the top is golden and bubbly.
7. Serve:
Allow the quiche bake to cool for a few minutes before slicing. Serve with salsa and fresh herbs if desired.
