Ingredients:

1 lb ground beef (90% lean or leaner)
1 tbsp olive oil
1 small red onion, diced
2 cloves garlic, minced
1 small zucchini, diced
1 red bell pepper, diced
1/2 cup cherry tomatoes, halved
1/3 cup Kalamata olives, sliced
1 tsp dried oregano
1/2 tsp smoked paprika
1/2 tsp ground cumin
1/4 tsp red pepper flakes (optional)
Salt & black pepper to taste
1/4 cup crumbled feta cheese
1 tbsp lemon juice
2 tbsp fresh parsley, chopped

Instructions:
Heat the Oil:
In a large skillet, heat olive oil over medium heat.
Cook the Beef:
Add ground beef and cook for 5-6 minutes, breaking it apart with a spatula until browned. Drain excess fat if needed.
Sauté Aromatics:
Add the diced onion and garlic, cooking for 2 minutes until fragrant.
Add Veggies & Spices:
Stir in zucchini, red bell pepper, cherry tomatoes, olives, oregano, paprika, cumin, and red pepper flakes. Cook for another 5-6 minutes, stirring occasionally, until the veggies are tender.
Finish with Lemon & Feta:
