 Ingredients:

For the Chicken:

1 lb (450g) boneless, skinless chicken breast or thighs, cut into bite-sized pieces

1 tbsp soy sauce

1 tbsp cornstarch

1 tbsp oil (olive or sesame)

For the Sauce:

½ cup pineapple juice (from canned pineapple or fresh)

¼ cup soy sauce (low-sodium recommended)

2 tbsp honey or brown sugar

1 tbsp rice vinegar or apple cider vinegar

1 tbsp ketchup (adds a tangy balance)

1 tsp grated fresh ginger

2 cloves garlic, minced

1 tsp cornstarch (mixed with 1 tbsp water)

For the Stir-Fry:

1 cup pineapple chunks (fresh or canned)

1 red bell pepper, diced

1 green bell pepper, diced

½ small onion, chopped

2 green onions, chopped (for garnish)

1 tsp sesame seeds (optional, for garnish)

For the Rice:

2 cups cooked jasmine rice or brown rice

 Instructions:

1. Marinate the Chicken

In a bowl, mix chicken pieces with soy sauce and cornstarch. Let it sit for 10–15 minutes.

2. Make the Sauce

In a small bowl, whisk together pineapple juice, soy sauce, honey, vinegar, ketchup, ginger, garlic, and cornstarch mixture. Set aside.

3. Cook the Chicken

Heat 1 tbsp oil in a large skillet or wok over medium-high heat.

6. Serve
