Roasted Peppers and Garlic Stuffed Chicken Breast

This Roasted Peppers and Garlic Stuffed Chicken Breast is a flavorful and juicy dish, perfect for a weeknight dinner or special occasion. The chicken breasts are stuffed with sweet roasted peppers, creamy cheese, and aromatic garlic, then baked to perfection.  Ingredients:

For the Chicken:

2 large boneless, skinless chicken breasts

1 tsp salt

½ tsp black pepper

½ tsp paprika

½ tsp Italian seasoning (or dried oregano)

1 tbsp olive oil

For the Stuffing:

½ cup roasted red bell peppers, sliced (store-bought or homemade)

2 cloves garlic, minced

½ cup shredded mozzarella cheese (or feta/goat cheese for a tangy twist)

1 tbsp fresh basil or parsley, chopped

For the Garlic Sauce:

1 clove garlic, minced

1 tsp lemon juice

½ tsp red pepper flakes (optional, for a little heat)

 Instructions:

1. Prepare the Chicken

Preheat your oven to 375°F (190°C).

Place the chicken breasts on a cutting board and carefully cut a pocket into each breast (don’t cut all the way through).

Season both sides of the chicken with salt, pepper, paprika, and Italian seasoning.

2. Make the Stuffing

In a small bowl, mix together roasted peppers, garlic, cheese, and fresh basil.

Stuff each chicken breast with the mixture and secure with toothpicks if needed.

3. Sear the Chicken

Heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat.

Sear the chicken for 2-3 minutes per side until golden brown.

4. Bake the Chicken

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

5. Make the Garlic  Sauce

While the chicken is baking, melt butter in a small pan over low heat.

Add garlic, lemon juice, and red pepper flakes, then stir for 30 seconds until fragrant.

6. Serve

Remove the chicken from the oven and let it rest for 5 minutes.

Drizzle with garlic butter sauce and garnish with extra fresh basil or parsley.
