Ingredients
8 oz pasta (penne, rotini, or whole wheat pasta)
1 tbsp olive oil
12 oz chicken sausage (sliced into rounds)
1 small onion (diced)
3 cloves garlic (minced)
1 medium zucchini (sliced into half-moons)
1 cup cherry or grape tomatoes (halved)
½ tsp red pepper flakes (optional)
½ tsp dried oregano
½ tsp dried basil (or 1 tbsp fresh basil, chopped)
½ tsp salt (or to taste)
¼ tsp black pepper
½ cup low-sodium chicken broth (or pasta water)
¼ cup grated Parmesan cheese (plus more for serving)
1 tbsp lemon juice (optional, for brightness)
Instructions
1. Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
Reserve ½ cup of pasta water, then drain and set aside.
2. Saute the Chicken Sausage:
Heat olive oil in a large skillet over medium heat.
Add the sliced chicken sausage and cook until browned, about 3-4 minutes per side.
Remove from the skillet and set aside.
3. Cook the Vegetables:
In the same skillet, add the diced onion and cook for 2-3 minutes until softened.
Stir in the garlic, zucchini, and red pepper flakes, and cook for another 3-4 minutes until the zucchini is tender.
4. Add Tomatoes & Seasonings:
Add the halved cherry tomatoes, dried oregano, dried basil, salt, and black pepper.
Cook for 2-3 minutes until the tomatoes start to soften and release their juices.
5. Combine & Simmer:
Return the cooked sausage to the skillet and stir everything together.
Pour in the chicken broth (or reserved pasta water) and simmer for 2 minutes to let the flavors meld.
6. Toss with Pasta & Finish:
Add the drained pasta and toss well to coat in the sauce.
Stir in Parmesan cheese and lemon juice (if using).
7. Serve:
Garnish with extra Parmesan and fresh basil if desired. Serve warm and enjoy!
