Cheesy Enchilada Chili

This cheesy enchilada chili is the perfect mix of bold Mexican flavors and hearty chili comfort. Made with beans, vegetables, and a rich enchilada sauce, it’s finished with plenty of gooey melted cheese. Perfect for cozy nights, game day, or meal prep!

 Ingredients

For the Chili:

2 tablespoons olive oil

1 onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 jalapeno, finely chopped (optional for heat)

1 pound (450g) ground beef or turkey (or use extra beans for vegetarian)

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

1/2 teaspoon oregano

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can kidney beans, drained and rinse

1 (15 oz) can corn, drained

1 (15 oz) can diced tomatoes

1 ½ cups enchilada sauce (store-bought or homemade)

1 cup beef or vegetable broth

For the Cheesy Topping:

1 ½ cups shredded cheese (cheddar, Monterey Jack, or a Mexican blend)

1/2 cup sour cream (optional, for creaminess)

 Instructions

1. Cook the Base

1. Heat olive oil in a large pot over medium heat.

2. Add onion, garlic, bell pepper, and jalapeno. Sauté for 5 minutes until softened.

3. Add the ground meat (if using) and cook until browned, breaking it up with a spoon. Drain excess fat if needed.

2. Build the Chili

1. Stir in cumin, chili powder, smoked paprika, oregano, salt, and black pepper. Cook for 1 minute to toast the spices.

2. Add black beans, kidney beans, corn, diced tomatoes, enchilada sauce, and broth. Stir well.

3. Bring to a simmer and cook for 25–30 minutes, stirring occasionally, until thickened.

3. Add the Cheese

1. Reduce heat to low. Stir in 1/2 cup of shredded cheese and sour cream (if using) for extra creaminess.

2. Sprinkle the remaining 1 cup of cheese on top and cover with a lid for 5 minutes until melted.

4. Serve & Enjoy

1.Garnish with chopped cilantro, avocado slices, or tortilla strips.
