This Jalapeno Peach Glazed Chicken is the perfect balance of sweet, spicy, and savory flavors. Juicy chicken breasts (or thighs) are coated in a sticky, caramelized peach glaze infused with fresh jalapenos, honey, and garlic, making every bite bold and delicious. This dish is high in protein, naturally gluten-free, and great for grilling, baking, or pan-searing.

Ingredients

For the Chicken:

4 boneless, skinless chicken breasts (or thighs)

1 tablespoon olive oil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika

½ teaspoon garlic powder

For the Jalapeno Peach Glaze:

1 cup peach preserves (or fresh pureed peaches)

1 small jalapeno, finely chopped (remove seeds for less heat)

2 tablespoons honey (or maple syrup)

1 tablespoon apple cider vinegar (or lime juice)

1 tablespoon soy sauce (or coconut aminos for gluten-free)

1 teaspoon Dijon mustard

2 cloves garlic, minced

½ teaspoon red pepper flakes (optional, for extra heat)

Instructions

Step 1: Prepare the Chicken

1. Pat chicken dry with a paper towel and season with salt, black pepper, smoked paprika, and garlic powder.

2. Heat 1 tablespoon olive oil in a large skillet (or preheat the grill to medium heat).

Step 2: Make the Jalapeno Peach Glaze

1. In a small saucepan over medium heat, combine peach preserves, chopped jalapeno, honey, apple cider vinegar, soy sauce, Dijon mustard, garlic, and red pepper flakes.

2. Simmer for 3-5 minutes, stirring frequently, until the glaze thickens slightly.

3. Remove from heat and set aside.

Step 3: Cook the Chicken

For Stovetop:

1. Add chicken to the hot skillet and cook for 5-6 minutes per side, until golden brown and almost fully cooked.

2. Brush the chicken with the jalapeno peach glaze and cook for 2 more minutes per side, allowing the glaze to caramelize.

For Grilling:

1. Grill the chicken for 5-7 minutes per side over medium heat.

2. During the last few minutes, baste with the glaze, flipping occasionally to prevent burning.

For Baking:

1. Preheat oven to 400°F (200°C).

2. Place seasoned chicken on a baking sheet and bake for 20-25 minutes (or until internal temp reaches 165°F/74°C).

3. Brush with glaze during the last 5 minutes of baking.

Step 4: Serve & Enjoy

Let the chicken rest for 5 minutes before slicing.

Garnish with fresh cilantro or sliced jalapenos for extra flavor.
