Ingredients
2 lbs (900g) baby potatoes (Yukon Gold or red potatoes), halved or quartered
3 tbsp olive oil
4 cloves garlic, minced
1 tsp salt
½ tsp black pepper
1 tsp dried oregano
1 tsp dried thyme
1 tsp dried rosemary (or 1 tbsp fresh, chopped)
½ tsp smoked paprika (optional, for extra depth)
2 tbsp grated Parmesan cheese (optional, for extra crispiness)
1 tbsp fresh parsley, chopped (for garnish)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 425°F (220°C).
Line a baking sheet with parchment paper or lightly grease it.
Step 2: Prepare the Potatoes
Wash and dry the potatoes thoroughly. If using large potatoes, cut them into bite-sized pieces.
In a large bowl, toss the potatoes with olive oil, garlic, salt, black pepper, oregano, thyme, rosemary, and smoked paprika.
If using Parmesan, sprinkle it in and mix well.
Step 3: Arrange and Roast
Spread the potatoes out in a single layer on the baking sheet, cut-side down for maximum crispiness.
Roast for 30-35 minutes, flipping halfway through, until golden brown and crispy.
Step 4: Serve & Enjoy
Remove from the oven and sprinkle with fresh parsley.
Serve immediately with your favorite dipping sauce or as a side dish.
