Instructions

Step 1: Prep the Bitter Gourd

1. Wash and thinly slice the bitter gourds into rings or half-moons (remove seeds if large).

2. Sprinkle with ½ tsp salt and let sit for 15–20 minutes. This draws out excess bitterness.

3. Rinse well and pat dry.

Step 2: Bake the Bitter Gourd

1. Preheat oven to 400°F (200°C).

2. Toss the slices with olive oil (and turmeric, if using).

3. Spread on a baking tray lined with parchment paper.

4. Bake for 20–25 minutes, flipping halfway, until golden and slightly crisp at edges.

Step 3: Make the Sweet & Sour Glaze

1. In a small pan, mix all sauce ingredients and simmer for 2–3 minutes until slightly thickened.
