Oatmeal Apple and Carrot Cakes
These soft, spiced cakes combine oats, grated apples, and carrots for a fiber-rich treat that’s subtly sweet and full of warm flavors. They’re naturally sweetened, kid-friendly, and easy to make gluten-free or vegan.

Ingredients
1 cup rolled oats (quick or old-fashioned)
1/2 cup whole wheat flour (or oat flour for GF)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
Pinch of salt
1 large egg (or flax egg: 1 tbsp flaxseed + 3 tbsp water)
1/3 cup maple syrup or honey
1/4 cup unsweetened applesauce (or mashed banana)
1/4 cup olive oil or melted coconut oil
1 tsp vanilla extract
1 medium apple, grated (with skin on)
1 medium carrot, grated
* Optional: 1/4 cup raisins or chopped walnuts.
Instructions
1. Preheat Oven:
Set to 180°C (350°F). Line or grease a muffin tin or mini cake molds.
2. Mix Dry Ingredients:
In a large bowl, combine oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
3. Mix Wet Ingredients:
In another bowl, whisk egg, maple syrup, applesauce, oil, and vanilla until smooth.
4. Combine and Fold:
Add wet mixture into the dry and stir just until combined.
Gently fold in grated apple, carrot, and optional mix-ins.
5. Fill and Bake:
Spoon batter into molds about 3/4 full.
Bake for 25–30 minutes or until a toothpick comes out clean and tops are golden.
6.Cool and Serve:
Let cool in the pan for 5 minutes, then transfer to a wire rack.
