Ingredients

For the Roasted Veggies:

1 cup chopped bell peppers (red, yellow, green)

1 small zucchini, diced

1 small red onion, sliced

1/2 cup cherry tomatoes, halved

1 tbsp olive oil

Salt and pepper, to taste

1/2 tsp dried oregano or Italian seasoning

For the Toast:

4 slices whole grain or sourdough bread (gluten-free if needed)

1 cup shredded mozzarella or cheddar cheese

2 tbsp grated Parmesan (optional)

Optional spread: hummus, pesto, or ricotta (for base layer)

Fresh basil or arugula, for garnish

Instructions

1.Roast the Vegetables:

Preheat oven to 200°C (400°F).

Toss chopped vegetables with olive oil, salt, pepper, and seasoning.

Spread on a baking sheet and roast for 20–25 minutes, until caramelized and tender.

2. Toast the Bread:

Lightly toast the bread slices in a toaster or oven for crispness.

3. Assemble the Toasts:

Optional: Spread a layer of hummus or pesto on the toasted bread.

Top with roasted veggies and sprinkle generously with cheese.

4. Melt the Cheese:

Place toasts back in the oven or under a broiler for 5–6 minutes until cheese is bubbly and golden.

5.Serve:

Garnish with fresh basil, arugula, or a drizzle of balsamic glaze if desired.
