Mediterranean Scallion Crackers

These homemade crackers are infused with chopped scallions, herbs, olive oil, and sea salt — inspired by Mediterranean flavors. They’re gluten-free optional, crisp, and make a satisfying snack or mezze platter addition.

Ingredients 

1 cup all-purpose flour (or gluten-free flour blend)

1/4 cup whole wheat flour (or almond flour)

1/2 tsp baking powder

1/2 tsp sea salt

1/4 tsp black pepper

2 scallions (green onions), finely chopped

1 tsp dried oregano or thyme

1/2 tsp sesame seeds or za’atar (optional)

1/4 cup extra virgin olive oil

1/4 cup water (more if needed)

Instructions:

1. Mix Dry Ingredients:

In a bowl, whisk flours, baking powder, salt, pepper, and herbs.

2. Add Flavor:

Stir in chopped scallions and sesame or za’atar if using.

3. Combine Wet Ingredients:

Add olive oil and water gradually, mixing until a dough forms.

If too dry, add a tablespoon more water. Dough should be soft but not sticky.

4. Roll & Cut:

Preheat oven to 180°C / 350°F.

Roll dough between two sheets of parchment paper to about 1/8 inch (2–3 mm) thick.

Cut into squares or triangles with a pizza cutter. Transfer to a lined baking tray.

5. Bake:

Bake for 20–25 minutes or until golden and crisp.

Let cool fully for maximum crunch.

Notes & Tips:

Make it low-carb:Use almond flour and flaxseed meal instead of wheat flour.

Extra crunch:Chill dough before baking and use a convection setting.

Add-ons:Sprinkle with smoked paprika or chili flakes before baking for a spicy kick.
